Treat yourself to an age-old family tradition with these buttery, gingery crunchy biscuits that make a wonderful teatime treat. Served with a hot cup of coffee or tea, they are perfect for dunking. Try them crumbled over ice-cream for a yummy dessert or crushed and mixed with butter as a base for tarts.
For best results, store in an airtight container and consume within 3 months (if they last that long!). If, by accident, you leave the cookies out and they go soft, place them into a very low oven 50degC with the door open for around 2 hours. Remove, leave to cool and put them in an airtight container. Your cookies will be as good as new and ready for dunking again.
